
Pearson’s mulled cider
When the days turn sharp and the evenings draw in, nothing feels more welcoming than a glass of Pearson’s mulled cider ticking away on the hob. Pearson’s Medium cider brings natural orchard sweetness, lifted by citrus and layered with warming winter spices. It’s simple, aromatic, and exactly the kind of drink you want to hand to friends as they step through the door.
Serves 15
You’ll need:
- 2 litres Pearson’s Medium Cider
- 6 cloves
- 3–4 star anise
- ¼ nutmeg, finely grated into the pan
- 1 cinnamon stick
- 1 vanilla pod, halved
- 1 orange, juice only
- 2 clementines, juice only
- 4–5 tbsp caster sugar (to taste)
How to make it:
- Pour the cider into a large pan over low heat.
- Warm gently for a few minutes without boiling.
- Add the cloves, star anise, grated nutmeg, cinnamon stick and split vanilla pod.
- Stir in the orange and clementine juices, then increase the heat until the cider reaches a light boil.
- Reduce to a gentle simmer and let it infuse for 5–8 minutes, allowing the spices and citrus to meld.
- Taste and add caster sugar gradually until the flavours feel balanced.
- It shouldn’t be overly sweet, just rounded.
- Ladle into heatproof glasses or mugs and serve warm.
